My Favorite Christmas Cookie Recipe


One of my favorite memories as a child was eating "snowball cookies" and putting them out for Santa. Along with an ice-cold Coke, because according to my dad, it was Santa's favorite soda. *wink*

As I got older, the tradition grew into me and my mom baking them together. You know those family recipes that you only have on an old index card, written in pencil, and covered with butter stains? This is ours, and I am so excited to share it with you all today. I have also teamed up with a group of bloggers to host a virtual cookie exchange. We only make a quadruple batch (yes, you read that correctly) so that is the recipe I am going to share. Honestly, a quadruple batch isn't as big as it sounds, and they are great to bring to friends and coworkers! The best part is that it is an extremely easy recipe to make.



"Snowballs"
1 lb Butter
8 T Sugar
4 tsp. Vanilla
4 c. Cake Flour
4 c. Ground Pecans
1/2 tsp. Salt
1 box Powder Sugar

Cream butter and sugar. Add vanilla, nuts, flour and salt. Once mixed, roll into balls (size is your preference). Place on un-greased cookie sheet and bake at 325 for 30-35 minutes. Once baked and still hot, roll in powder sugar. Once cooled, roll again. Enjoy!

  5. I can assure you, these are good cookies.. I ate 12 of them in about 30 minutes earlier this week.

    Not recommended for those with weak self control.
